There are some things in life when paired together set off a nostalgic symphony in your mouth, whether it be a simple peanut butter and jelly sandwich or beautiful weather and roasted pork tacos (with a margarita or two on the side), like this past Friday. The original Ninfa's on Navigation was the destination of choice, and having been to other Ninfa's and having a food poisoning fiasco, the word original means more than you would think. I started off with a from scratch margarita on the rocks and after the first sip I realized one was all I could handle. To soak all of that up, I ordered the tacos al pastor which is roasted pork and pineapple and decided upon corn instead flour tortillas which are made fresh every day, in house. It took more will power than I thought I had to not stuff those tacos in my mouth after the first taste. Moist slow roasted pork sprinkled with green and white onions and smokey grilled pineapple. Sweet, salty, smokey heaven wrapped up in a fresh and warm tortilla and I just realized where I am going for dinner tonight. Besides offering some of the best food and service, there is also a shuttle available to take you to and from sports games with free parking at the restaurant. So, if you find you have a craving for some authenticity or just need a ride to the ball game, stop in here.

Such an interesting article. I too recall several Ninfa's experiences and understand the complexity of flavors that a well-balanced Mexican or Tex-Mex dish holds. As a "man-of-the-kitchen" I enjoyed your description of a balanced sweet/salty dish blending the flavors of pineapple merging with pork--more difficult than many think. Prost to your relatively new blog! I know you've just started, but given that I've dined with you and others on select occasions, I also know your experience is far beyond these select experiences.
